Abstract In the context of the research work being carried out at the Research Institute of the Faculty of Medical Sciences of the University of Aconcagua, this work will refer to some aspects related to one of the projects being carried in this Institute, entitled “Wine, polyphenols and health benefits”. This project originated in June 2016, when we organised at the University of Aconcagua, together with the University of Buenos Aires, the Wine and Health Colloquium, to celebrate 25 years of the French Paradox. The speakers at this colloquium were Dr Raúl Pastor, a cardiologist and one of the members of our team, and Dr Dominique Lanzmann, a French doctor and researcher who worked with Serge Renaud – the French scientist considered to be the father of the French Paradox, and a pioneer in spreading the beneficial effects of wine on health – at the University of Bordeaux. 1 Research Institute, Faculty of Medical Sciences, University of Aconcagua; corresponding author: apenissi@uda.edu.ar.
