LEGAL PROVISIONS PERTAINING TO SUSTAINABLE TOURISM 249 The mandatory criteria in relation to waste management, therefore, further includes that the hotel must minimise its use of disposable and consumable goods, which incorporates any of the following options, such as minimising its use of paper; and/or creating a system to reuse discarded bed sheets, towels and table cloths for alternate purposes. XII. PURCHASING OF PRODUCTS In order to be sustainably viable, a hotel must also ensure that its purchasing policy is in line with sustainable principles, whereby locally appropriate and ecologically sustainable products are sought, which includes food, consumables and building materials. This criterion under the Eco Certification dictates that the purchase of local products shall include at least ten out of the thirteen listed items, that is, milk, eggs, fruit, vegetables, oil, pork, lamb, beef, chicken, fish, mineral water, wine and beer. The purchase of cleaning products must be carried out with sustainable goals, that is, eliminating corrosive cleaning products, phosphate and bleaching detergents, whilst also reducing or replacing pesticides which are harmful products, and choosing biodegradable cleaning products. XIII. CONTROL OF CHEMICALS The control of chemicals also forms the basis of upholding sustainability principles, including the safety storage thereof. Indeed, the safe use and storage of chemicals falls within the Occupational Health and Safety Authority Act 35 which is entitled “Protection of the Health and Safety of Workers from the Risks related to Chemical Agents at Work Regulations” 36 .
