10 amounts of sulphites in the preparation of the wine to achieve the stability of the final product of that year. Therefore, it should be allowed to increase the maximum sulfur dioxide content when these conditions are met (Recital 8). 4 th ) Wine is a product with a long storage period and some wines are traditionally stored for several years in barrels or vats before being marketed. Under the conditions of Regulation (EEC) No 2092/91, it is allowed, pursuant to Regulation (EC) No 889/2008, the marketing of such wines for a limited period of time, maintaining the labeling requirements under of that Regulation, until their stocks are exhausted (Recital 9). 5 th ) A part of the stored wines have already been produced through a vinification process that complies with the rules on organic wine production provided for in this Regulation. In cases where this circumstance can be demonstrated, the use of the community logo for organic production referred to in Article 25 (1) of Regulation (EC) No. 834/2007, named since 1 July 2007, must be authorized. 2010 “EU Organic Logo”, in order to allow fair comparison and competition between organic wines produced before and after the entry into force of this standard. When this is not the case, the wine must be exclusively labeled as "wine made with organic grapes", without the "EU organic logo", provided that the wine has been produced in accordance with Regulation (EEC) No 2092/91 and Regulation (EC) No 889/2008 before its amendment by this Regulation (Recital 10). Finally, it should be noted that this Regulation will be binding in its entirety and directly applicable in each Member State the day after its publication, that is, on 1 August 2012. In that same year, the International Organization of Vine and Wine (OIV) 26 , by Resolution OIV-ECO 460-2012, established the "Principles of organic viticulture", after considering the work developed by the group of experts "Law and consumer information ”, and considering that organic viticulture is a production system that is gaining strength in the wine sector. For this reason, it was decided to adopt the following elements as general principles of organic production applied to viticulture.
