8 quinquies) the specific rules for winemaking are established, but we will not dwell on them because they were modified by the 2012 Implementing Regulations. 3.2. The 2012 Implementing Regulations on the application provisions relating to organic wine The Implementing Regulation (EU) No 203/2012, of 8 March 19 , modifies Regulation (EC) No 889/2008, which establishes provisions for the application of Regulation (EC) no. 834/2007, of the Council, with regard to the application provisions relating to organic wine. In Recital 3 it is noted that the production of organic wine implies the use of certain products and substances, such as additives or technological aids under well-defined conditions. To this end and on the basis of the recommendations of the study carried out at European Union level entitled "Organic viticulture and wine-making: development of environment and consumer friendly technologies for organic wine quality improvement and scientifically based legislative framework" (also known as “ORWINE” 20 ) the use of such products and substances must be authorized in accordance with Article 21 of Regulation (EC) No 834/2007 21 . ORWINE is a research project funded by the European Commission that began in February 2006 and whose work ended in 2009 when the new European regulation on organic farming 22 was expected to come into force. Until then, wine produced with organic grapes, that is, the raw material, had been regulated, but not its production method, which continued to be made according to conventional methods. Therefore, the Orwine project aimed to develop a legislative framework that would specify wine-making technologies that respect the environment and the consumer for the production of organic wine 23 .
